It all began with the dream of a pastry chef, Ruggero Bauli, who with unstoppable determination and visionary foresight started a story that spans over 100 years of pastry excellence. Bauli’s doughs and the secret of their quality originated in a small pastry shop in Verona. Here, Ruggero learned the secrets of pastry art, including the use of sourdough, which still today is at the heart of Bauli’s creations. In 1922, with passion and dedication, he opened his first workshop with a shop, which became the city’s first pastry shop.
